Gooey Mallow Cookie Bars

*2 Tbsp. vegan butter/margarine (I use soy-free Earth Balance)
*1 bag Dandies vegan marshmallows
*1 pkg. vegan sandwich cookies, crumbled (my favorite are Country Choice Chocolate Sandwich Cremes)
*1/4 c. unsweetened, shredded coconut + more for topping
*1/4 c. vegan semi-sweet chocolate chips (opt.)

Melt butter in saucepan over medium heat. Stir in marshmallows until completely melted. Add cookie crumbles and coconut; stir gently until evenly mixed. Press mixture into 8x8 pan. Top with additional crumbs, coconut, and/or chocolate chips. Allow to cool completely.

Note: This recipe definitely needs some work, but not on taste! The only problem I had with them was mixing the cookies into the melted marshmallows, which made them a bit messy to eat. I will be working on tweaking this recipe to make them more of a "bar". BUT...I took them to a party and they were a HUGE hit among friends (vegan and non-vegan alike)!
