I have been craving some hearty soup. It is perfect and always makes me feel warmed up on these very cold, yucky, winter days and nights. This soup is oil-free and full of yummy veggies and lots of lentils (I like my soups thick).
This made a huge pot of soup. It is excellent reheated, and will be great for lunch over the next few days.
*4 c. vegetable stock or 4 c. water + 2 vegan bouillon cubes
*2 cloves garlic, minced
*1/2 yellow onion, chopped
*3 ribs celery, chopped
*3 small carrots, chopped
*1 can organic fire roasted tomatoes
*1 or 1 1/4 c. lentils, rinsed
*1 tsp. cumin
*1/2 tsp. dried thyme
*celery greens
In large pot, combine all chopped veggies and lentils. Bring to a boil. Reduce heat and add spices. Let simmer about 30-45 min. (until veggies are tender and lentils are cooked). Add celery greens (those great bits of leafy, light green stalks in the very middle) during last 10 min. of cooking.
That's it! Super easy, right?! And yummy...
